Ingredient notes:
Condensed milk - not the same as evaporated milk! You can use store-bought or make condensed milk at home.
Desiccated coconut flakes - I recommend using fine coconut flakes for Raffaello batter and larger ones for coating.
White chocolate - use high quality white chocolate to avoid it seizing when melted. I used Raffaello chocolate for more authentic flavor.
Substitutes
- Condensed milk - use plant-based condensed milk for a dairy-free version.
- Chocolate - use milt or dark chocolate for a different flavor.
- Almonds - use hazelnuts instead.
How To Make Coconut Raffaello Balls

Step 1. In a large mixing bowl, add the desiccated coconut and condensed milk. Mix with a silicone spatula until incorporated.

Step 2. Melt the white chocolate. You can melt it in a microwave stirring in 30 second intervals or by using a double-boiler.

Step 3. Add the melted chocolate to the desiccated coconut mixture and stir until evenly incorporated.

Step 4. Wet your hands in water to prevent the Raffaello balls from sticking and roll them between the palms of your hands. To make smaller coconut balls, chop the almonds in half.
Gently press the chopped or whole almonds into the coconut balls and reshape to seal them.

hi. you have some yummy sounding recipes. question, can i use coconut condensed milk in place of regular condensed? any of your recipes that call for Almonds or almonds flour. can I use tigernut flour and other nuts like pecan or macadamia. i am allergic to dairy and most nuts. thank you for sharing you recipes. i look forward to trying them out.

Hi Julia! For this Raffaello recipe you can use coconut condensed milk! I only have macaron recipes that call for almond flour and in macarons you need to modify the entire recipe if you want to substitute the almond flour. So, I wouldn't recommend substituting almond flour 1:1 in macaron recipes. Are you also allergic to coconut flour?
